Ingredients: ¾ cup Edmonds standard flour; 1 tsp Edmonds baking powder; ½ tsp salt; Black pepper; 1 egg, beaten; 440g can cream-style corn; 2 Tbsps oil

Have a can of cream-style corn in your cupboard? Then it may be time to give our sweetcorn fritters a whirl.

Ingredients

¾ cup Edmonds standard grade flour
1 tsp Edmonds baking powder
½ tsp salt
Black pepper
1 egg, beaten
440g can cream-style corn
2 Tbsps oil

Method

Sift the flour, baking powder, salt and pepper to taste into a bowl.
Add the beaten egg, mixing to combine. Stir in the sweetcorn.
Heat the oil in a frying pan.
Drop spoonfuls of fritter mixture into the pan. Cook until golden then turn and cook the other side.
Drain on absorbent paper. Serve hot.

I had 1/2 440ml can of Watties Cream Corn
in the fridge, so I used this recipe to make 8 fritters, added parsley 1tsp and spring onions 1 Tbspn with a tsp of Parmesan Cheese as well, delicious
